Just so you know... perma-death was made popular, bu roguelikes not an extremely niche game like dark-souls. And devs include it because they want their game to have perma-death. Indie gaming is not a consumer-oriened market, or at least not as much as you would like to think. A lot of devs make the game they want first, and appeal to consumers second.
