Ingredients (serves 4)
1. 4 eggs
2. olive oil
3. 4 slices of white bread (you can use wholemeal if you prefer, but white works better)
4. maple syrup (to serve)
5. Vinegar
Method
1. Crack all four eggs in a bowl and beat
2. Heat the oil in a frying pan
3. When the oil is hot, dip one piece of bread in the egg, coating both sides - it's easier to do this if the egg is in a flat dish, for example a small baking tray
4. Transfer the soaked bread to the hot pan and leave it to cook for 1-2 minutes, turn it over and cook the other side
5. Once finished set to one side and repeat with the rest of the bread
6. Serve the eggy bread with maple syrup
