Pre-roast Beef: Brush a 1kg beef fillet with oil, season, and roast at 220C for 15–20 mins. Chill for 20 mins.
Mushroom Duxelles: Finely chop 250g mushrooms, then sauté with thyme in oil and butter. Add 100ml wine, cook until absorbed, and cool.
Prosciutto Wrap: Lay 12 slices on cling film, spread half of the duxelles, place the beef on top, add remaining duxelles, and roll tightly.
Pastry Enclosure: Roll 1/3 of a 500g puff pastry pack into a strip, place the beef on it, brush with egg wash, then cover with the remaining pastry. Seal and glaze with egg yolk, scoring for decor.
Final Bake: Chill, then bake at 200C for 20-30 mins. Let rest for 10 mins, then slice and serve.
