Regarding this mod you can delete the outdated tables and copy & paste the new ones or simply right click and choose update with all of the outdated tables with RPFM.
If you have other doubts just consult the game's modding guides.
Every mod already uploaded in the workshop and specifically the ones you are subbed to are located in steamapps/workshop/content/594570/specific folders with different numeric ID.
As Arslo said a few comments below you can find this mod under the 1204361939 ID, inside that folder you will find the data pack file and the mod's preview png image.
To overwrite vanilla units you just need to have the table with their edited entry in a mod. That will change what appears game.
If you are editing mods then that's even easier.
If you try to launch the game with the current tables it will crash.
You'll need to manually update each of the outdated tables with Frodo45127's Rusted PackFile Manager (RPFM) and don't worry: it's super easy to do.
